Wild Flowers

The hedgerow along a rural back lane in Ireland is a canvas of wild flowers, fauna and food throughout the seasons. June is perhaps the most precious time with the arrival for just a short while of the wild strawberry. Small, quick to ripen and fast to disappear thanks to astute wild birds it's a delicacy worth the forage for its pungent precise flavour from such a tiny berry. Equally good for blackberries, elderberries, rosehip and hazelnuts in October, or elderflower for cordial in May...it's a constant source of variety and fun.
